LEGUMES
We call them dals. They are rich in protein and are an essential part of an Indian vegetarian diet. Our bodies need a couple of bowlfuls every day. Mix them with your rice, or eat them with your rotis. You can sprout the whole ones and use them to make a tempting salad. Try different ways of serving them for variety. Some colored beans, like Rajmah contain antioxidants.
